Frankfort Ave the previous site of Salsa Grill. The restaurant, is a second site for the concept, which was created by owner Benny Siddu, said Enver Arslanoglu, general manager of the Louisville restaurant. He said Siddu is based in Chicago, where the first Volare is located. Local investors in the restaurant are Rally's founder Jim Patterson and former Xerox Branch Manager Paul Perconti along with Joshua Moore (executive chef) and Tarek Hamada (assistant manager).Described as an upscale, "white-tablecloth" restaurant, Volare features "authentic" Italian cuisine, and has a extensive wine collection with close to 100 selections sold by the bottle and glass.
